Induction cooking, while tremendously effective and efficient, does require specialized cookware. Choosing cookware for a standard range can be quite a task, and choosing cookware that is induction compatible can be even harder.
Under ordinary circumstances, you would most admire the overall appearance of a cookware set, but there is more to consider when it comes to induction.
Induction Cookware Necessities
Several requirements are necessary for induction cooking to work – remember, this is not the thermal transfer of heat. First, the base of the pot or pan must be flat and smooth.
As induction works via electromagnetism, the base of the cookware must be in contact with the flat surface of the cooktop, and so curved or uneven bases are unsuitable.
Just as important is the material from which the cookware is made. The cookware must either be made from a magnetic material or at the very least have a base (or internal plate) that is magnetic. Cast iron (and coated cast iron) is magnetic and therefore suitable as a material.
However, cast iron in itself brings some problems to cooking – it can be tricky to clean, is often heavy, and no matter what method of heating is used it can take quite a while to reach a suitable temperature.
Furthermore, cast iron is resistant to quick temperature changes, negating one of the benefits of cooking via magnetic induction – the option to rapidly and accurately change the temperature of the heating element.
Enameled coated cast iron is usually lighter and easier to clean, but the coating can be severely damaged at high temperatures, again limiting its usefulness.
